Easter Morning Pancakes


     The best April Fools prank that was ever played on me was when I was a kid. My mom woke me and my sisters up for school just like any other day. We got dressed, gathered our homework and grabbed a quick breakfast. Even though the school was walking distance I hadn’t given myself enough time to eat. I remember grabbing an apple and running out the door. I got part-way down the street when I looked up and realized that there were no cars in front of the school and most of the lights were off. I stood there for a few minutes trying to process then turned around and slowly walked back to my house. My mom was in our yard and I yelled “Is  school canceled today?” She started laughing and laughing. It wasn’t until I got back to our yard that she caught her breath enough to tell me she had changed all the clocks in the house and I didn’t have to be at school for a few hours. “April Fools!” She yelled, “Let’s go get doughnuts.” My sisters and I had an amazing morning getting to hang out with my mom and eat doughnuts for breakfast. I will always remember that morning because not only did my my mom’s prank turn into a treat… we also got to spend a relaxing morning together enjoying each others company.

This year we have the unique overlap of April Fool’s and Easter falling on the same day. One is usually about mischief and the other is usually about family and community. It is not an easy task coming up with a way to embrace both on the same day!

With my youngest barely a month old I am not feeling overly creative this year… so I will be surprising my family by infusing our morning pancakes with our favorite teas. Here is the recipe for you fellow tea-lovers that need some breakfast inspiration:


INGREDIENTS:

  • Favorite pancake mix

  • Favorite tea

  • Boiling water

  • Favorite pancake toppings

Steep 2 to 3 teaspoons of your favorite loose leaf tea in a cup of boiling water for about five minutes. Gather your pancake toppings while you wait. Strain the tea into your pancake mix. (Follow the instructions on the package and replace the water with tea.) Cook your pancakes over medium heat. Top with your favorite goodies and enjoy!


As you can see I tested this out with a classic pancake mix and my favorite whole wheat blend. I used our Chariteas House Chai in the whole wheat and topped with whipped cream and maple syrup. For the classic I used March’s tea-of-the-month White Tea Bud and topped with lemon, butter and a touch of honey. Both turned out excellent! I plan on testing out some other teas Sunday morning. I am thinking Orange Grapefruit Wellness and Earl Grey.
